Chef Gary Jones is an Environmental Culinary Specialist on Disney’s Environmental Integration Team at the Walt Disney World® Resort. In this role, Chef Gary leads strategic initiatives that support achieving Disney’s environmental goals, working at the intersection of environmental sustainability and Food & Beverage culinary operations. He is responsible for leading Disney’s sustainable seafood sourcing commitment and has expertise in solutions to minimize waste, reduce greenhouse gas emissions and use water responsibly in culinary operations.
Prior to his current role, he was the Culinary Dietary Specialist for Walt Disney World® Resort, working with hundreds of Disney chefs to create menus that offer well-balanced and plant-based options. He participated in the development of the “Disney Check” program for healthful kids’ menus, and also played a key role in the development and implementation of the company’s allergy-friendly menus.
Chef Gary has 35 years of experience with The Walt Disney Company where he has held a variety of culinary positions, including Chef de Cuisine at several Walt Disney World® Resort locations, Managing Chef Instructor at Disney Institute, the opening team for Disneyland® Paris, and the international recruiting team for EPCOT®.
He is originally from Skaneateles, NY and is a graduate of Johnson & Wales University. He is married to Sandy, his wife of 36 years, and lives in Windermere, FL with their dog Cody.
